We fell in love with champagne at a small domain in the Aube. A sommelier friend of ours connected us with the importer of Champagne Dosnon, a small domain in Avirey-Lingey in the Côte des Bar. As we drove down into this tiny village I felt an instant connection. After a few hours in the vineyard, the cellar, and tasting wines in the fireplace lit tasting room I knew this was a special experience that would have lasting effects.
About a year later during a night of poor sleep I began thinking of things that I would like to do one day, not a bucket list - more of an adventure list. Spending a summer at a winery found its way to the top of the list. The next morning, as is so often the case, the ideas I formulated during the night didn’t seem like such a great idea. However, after sharing the story with my husband and friends they all agreed - why was this a bad idea? Why not make it happen? I then began considering this as an option and thought through all the wineries and winemakers I knew to find the perfect fit. Champagne Dosnon was the obvious answer. The connection I felt immediately upon entering the tiny village, the connection my husband and I made with Nicolas and Davy, and of course the intrigue of one of the world’s most complex wines meant there was no other option.
The trip was an unexpected adventure. I read every book and article I could find, watch videos, movies, seminars, and of course tasted as much champagne as possible before I left. I had no idea where this experience would lead me, or why it was so important for me to go other than to satisfy my intense need to continue learning about wine.
